Pumpkin Squares

I had to remake my Healthy Paleo Pumpkin Cookies for a couple of people that were having trouble with it. Since I was only using a portion of the can of pumpkin puree I decided to come up with another treat. These are a cross between a quick bread and a brownie. We tend to like less sweet treats in my family so feel free to up the honey if you have a real sweet tooth.

Paleo Pumpkin Squares

1 cup pumpkin puree
1/4 cup coconut butter
1/4 cup raw honey
3 tbsp coconut oil
1 tsp vanilla
4 pastured eggs
1/4 cup coconut flour
1 tsp baking soda
1/2 tsp pumpkin pie spice
1/4 tsp sea salt
1/3 cup chopped dark chocolate (I used this one)

Preheat oven to 350 degrees F. Mix your wet ingredients in a bowl. Mix the dry ingredients minus the chocolate in a separate small bowl. Add the dry to the wet and combine well. Stir in the chocolate chunks, then let sit for 5 minutes or so to let the coconut flour absorb the moisture. Pour into a greased 8×8 glass baking dish. Bake for 50-55 minutes. Let cool for 30 minutes, then slice and serve.

    I’m wondering if an egg substitute would work in this recipe?

      You could try using bananas and applesauce. Each egg is equivalent to 1/4 cup of applesauce or 1/2 of a banana. If you try it with those, please let me know how it turns out :)

    Crazy question – do you think I could use apple butter for this too? I made a bunch and don’t have pumpkin right now and really want to try this:) Thanks!!!

      You may need to add an extra tbsp of coconut flour to thicken it up if it’s wetter than pumpkin puree. That sounds really delicious so if you try it with that, please report back with how it goes :)

    I’m not using any sweeteners, so honey would be out for me. Any suggestions to substitute it? Or do you think it will still taste good, if I just omit it altogether?

      It really needs something to sweeten it up. Can you use pureed dates? If so, I would soak about 10-12 dates and puree them. If that’s out, please let me know and we can think of something else.
