Paleo Plantain Bread Recipe

Plantain Bread

The girls and I had a fun baking day recently where we made the Paleo Pecan Chew Cookies, Paleo Cashew/Almond Crunchies (with all cashews and no pumpkin puree) and this bread. I thought that I could create a really delicious bread without any added sweetener of any kind and I was right! Plantains are only 3 for $.99 at my local 99 Cents Only Store so I buy them every time I’m there.

Paleo Plantain Bread

2 black plantains
1/2 cup coconut butter
1/4 cup coconut oil
4 eggs
1 tsp vanilla
1/2 cup coconut flour
1 tbsp cinnamon
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp sea salt

Preheat oven to 350 degrees F. Cut the ends off the plantains and make a slit down the peel. Peel the plantains and smash them in a large bowl. Add the remaining wet ingredients and combine well. Combine the dry ingredients in a separate small bowl. Now add the dry to the wet and combine well. Pour mixture into a well greased 9×5 inch loaf pan. Bake for 45 minutes, or until a toothpick inserted in the middle comes out clean.
