Kerala Beef Fry

Today for breakfast the girls had Super Cereal with a banana. Lunch was leftover Sausage Sweet Potato Casserole for my husband and I that I made again last night. This time I made a bigger one in a 9×13 pan. For dinner I made a kerala beef fry and let me tell you, it was amazing! This dish originated in the southern Indian state of Kerala, hence the name :) My husband ate so much of it that we only have a small bit left for lunch tomorrow. I will definitely be making this again and next time I’ll have to double the recipe!

Kerala Beef Fry

3.5 lbs grass-fed chuck roast, cut into bite size cubes

2 tbsp chili powder
2 tbsp ground coriander
1 tbsp lemon juice
1 1/2 tsp garam masala
1 tsp ground curry leaves
3/4 tsp red pepper flakes
1/2 tsp turmeric
1/2 tsp sea salt

1 onion, thinly sliced
6 cloves garlic, thinly sliced
2 tsp ground ginger
1/2 tsp garam masala
fresh cracked black pepper to taste
1/4 cup unsweetened coconut flakes
1 tbsp coconut oil

Place the meat in a dutch oven. Combine marinade ingredients in a small bowl and then rub all over the meat. Let it marinate in the fridge for at least 2 hours. Take the meat out of the fridge, add 1/2 cup of water and bring to a boil. Lower heat and simmer, covered for 1 hour 15 minutes, or until tender. Heat up the coconut oil in a large saute pan over medium heat. Add the onions and garlic and cook until starting to brown, about 10 minutes. Next add the ginger, garam masala and pepper and saute for another minute or two. Add the meat and juices to the pan and cook until most of the liquid is evaporated, about 40 minutes. Now add the coconut flakes and saute for another 7 minutes. Serve with homemade naan or veggies of choice.
