Family Chow 8/3/13 – With Plantain Beef Tacos Recipe

Plantain Beef Tacos

Breakfast for the girls today was a Paleo Plantain Bread with bacon and almond butter sandwich. Lunch was leftover Asian Grilled Tri-Tip and sauteed bok choy for all of us. For dinner I made plantain beef tacos and they was so good! We really liked the bit of sweetness that the plantains added to it and topping it all off with hot sauce balanced it out. I had a couple of plantains that were black and mushy and I had already made a loaf of bread so I figured why not add it to some grass-fed ground beef.

Plantain Beef Tacos

3 lbs grass-fed ground beef
2 black plantains
3 small bell peppers, diced
1 1/2 onions, diced
1 tbsp ground cumin
1 tbsp granulated garlic
1 tbsp chili powder
sea salt & pepper to taste
2 tbsp fat of choice

Heat your fat of choice in a large saute pan and cook the meat for 5 minutes. Add the bell peppers and onions and saute for another 5 minutes. Cut the ends of the plantains, peel them and add them to the pan, mushing them up with the meat. Cook for another 5 minutes. Add the spices and continue to cook for another few minutes until meat is browned. Place the meat in lettuce leaves and top with avocado, hot sauce, cilantro etc.
