Family Chow 8/30/13 – Plus Moroccan Beef Kebabs & Green Beans Recipes

Moroccan kebabs/beans

Today for breakfast the girls had bacon, eggs, a pluot and banana chips. Lunch was leftover Paleo Fish Tacos for hubby and I. The girls had an almond butter and jelly sandwich on my homemade gluten-free bread, bell peppers, cucumbers and raisins. For dinner I made Moroccan beef kebabs and green beans. I love the spices used and how a lot of Moroccan dishes incorporate dried fruit and nuts into them. Both the kebabs and green beans were fantastic. The key is to marinate the meat for as long as you can. I did 6 hours, but overnight would be even better. This dish also came together really quickly; another plus in my book :)

Moroccan Beef Kebabs

2 lbs grass-fed ground beef
1 onion, quartered
4 garlic cloves
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp smoked paprika
1 tbsp ground ginger
1 tbsp ground cinnamon
1 tbsp ras el hanout
1 tbsp harissa paste
2 tsp ground turmeric
1 tsp sea salt
fresh ground pepper to taste

Place the onion and garlic in a food processor and blend until finely minced. Combine the spices in a small bowl and then add to the food processor. Pour food processor contents into the beef and combine well. Let it marinate in the fridge for at least 2 hours. Remove from the fridge and shape the meat around 8 metal skewers. If you use bamboo skewers, you’ll need to soak them for at least 30 minutes. They should look like somewhat elongated burgers. Place on an oiled grill and grill for about 6 minutes per side.

Moroccan Green Beans

2 lbs green beans or Chinese long beans, cut into 2 inch long pieces
2 tsp curry powder
1/4 cup raw pistachios
2 tbsp raisins
sea salt & pepper to taste
1 tbsp coconut oil

Heat up the coconut oil in a saute pan and add the green beans. Saute 3 minutes. Add the raisins and cook for another 3 minutes. Now add the pistachios, curry powder, salt and pepper and saute for another 3 minutes.
