Family Chow 8/26/13 – Plus Sausage Sweet Potato Casserole Recipe

Sausage/Yam Casserole

Breakfast for the girls today was Super Cereal with a plum. Lunch was leftover Best Primal Pizza Ever for all of us. For dinner I made us a casserole with breakfast sausage and you guessed it, sweet potatoes. It was so good that I regretted not buying more yams and making a bigger one. Ah well, there’s always next time :)

Sausage Sweet Potato Casserole

1 1/2 lbs pork breakfast sausage
4 small yams, peeled and cut into chunks
1 package Trader Joe’s Power To The Greens
1 red onion, thinly sliced
4 garlic cloves, minced
1 cup shredded mozzarella
1/4 cup half & half
1/4 tsp nutmeg
sea salt & pepper to taste
1 tbsp avocado oil

Preheat oven to 400 degrees F. Place the chopped yams in a pot of water, bring to a boil, then simmer until softened, about 15 minutes. Meanwhile, heat up the avocado oil in a large saute pan over medium high heat. Add the sausage and cook until no longer pink, about 10 minutes. Remove to a casserole dish (I used my 2.8 liter corningware). Add the onions to the pan and saute for 5 minutes. Add the garlic and cook for another couple of minutes. Remove to the casserole dish and combine well with the sausage. Next add the greens to the pan and cook until wilted, about 3 minutes. Drain the pot with the yams and mash with the half & half, nutmeg, salt and pepper. Add the greens and 1/2 cup of cheese to the yams. Now add that to the sausage mixture and combine well. Sprinkle the remaining 1/2 cup of cheese over the top and bake for 20 minutes.
