Family Chow 7/29/13 – Plus Leftovers Soup Recipe

Leftovers Soup

Breakfast for the girls today was Super Cereal with pears. Lunch was leftover leftovers soup :) It came out really good and was quick to throw together. The girls had cheese slices, olives, cucumbers, tomatoes, bell peppers and prunes. For dinner I made Asian lettuce wraps (recipe to come).

Leftovers Soup

1 lb seafood medley (mine had calamari, octopus, shrimp & mussels)
1 lb leftover London broil, sliced as thin as possible
1 medium onion, diced
6 garlic cloves, minced
3 cups broth of choice
2 tsp Italian seasoning
sea salt & pepper to taste
2 tbsp fat of choice

Heat your fat of choice over medium heat in a dutch oven. Add the onions and garlic and cook until soft, about 7 minutes. Next add the broth and Italian seasoning. Bring to a boil and then cover and simmer about 30 minutes. Add the seafood medley to the pot, bring to a boil again, then cover and simmer about 5-7 minutes. Add the sliced beef for the last couple of minutes so that it gets hot. Garnish with fresh parsley.
