Breakfast for the girls today was Super Cereal with pears. Lunch was leftover leftovers soup It came out really good and was quick to throw together. The girls had cheese slices, olives, cucumbers, tomatoes, bell peppers and prunes. For dinner I made Asian lettuce wraps (recipe to come).
1 lb seafood medley (mine had calamari, octopus, shrimp & mussels)
1 lb leftover London broil, sliced as thin as possible
1 medium onion, diced
6 garlic cloves, minced
3 cups broth of choice
2 tsp Italian seasoning
sea salt & pepper to taste
2 tbsp fat of choice
Heat your fat of choice over medium heat in a dutch oven. Add the onions and garlic and cook until soft, about 7 minutes. Next add the broth and Italian seasoning. Bring to a boil and then cover and simmer about 30 minutes. Add the seafood medley to the pot, bring to a boil again, then cover and simmer about 5-7 minutes. Add the sliced beef for the last couple of minutes so that it gets hot. Garnish with fresh parsley.
