Yes, I’m finally back to posting some recipes! Today for breakfast the girls had scrambled eggs, some Paleo Cashew/Almond Crunchies and an apricot. Lunch was on the go (I’ll explain why later) so we just picked up some In N Out and had some protein style burgers. For dinner I made super simple pulled pork along with a spinach and mushroom salad.
Super Simple Pulled Pork
3.5-4 lb bone-in pork shoulder
1 onion, chopped
Place the onion in the bottom of your crock pot and then place the pork shoulder on top, fat side up. Cook on the lowest setting for 18-20 hours. Remove the fat and bones and shred up the pork, leaving it in the juices until ready to serve. We topped ours with some sliced avocado and a bit of cottage cheese. See, told you it was super simple
*You could make some homemade bbq sauce and mix that in which is what I usually do, but was too lazy this time around.
