Family Chow 6/22/13 – Also Super Simple Pulled Pork Recipe

Pulled Pork

Yes, I’m finally back to posting some recipes! Today for breakfast the girls had scrambled eggs, some Paleo Cashew/Almond Crunchies and an apricot. Lunch was on the go (I’ll explain why later) so we just picked up some In N Out and had some protein style burgers. For dinner I made super simple pulled pork along with a spinach and mushroom salad.

Super Simple Pulled Pork

3.5-4 lb bone-in pork shoulder
1 onion, chopped

Place the onion in the bottom of your crock pot and then place the pork shoulder on top, fat side up. Cook on the lowest setting for 18-20 hours. Remove the fat and bones and shred up the pork, leaving it in the juices until ready to serve. We topped ours with some sliced avocado and a bit of cottage cheese. See, told you it was super simple :)

*You could make some homemade bbq sauce and mix that in which is what I usually do, but was too lazy this time around.

    I do the same exact ingredients (all 2 of them!) and it comes out amazing every time, except I do high for 4-6 and then low for 4. If you’re not home to change it mid-way, then doing it as long as possible on low should do the trick.

      Awesome! Yeah, I love how tender it comes out and you can really change it up once it’s cooked with different sauces.
