Family Chow 5/3/13 – Also Low Carb Chicago & Thin Crust Style Pizza Recipes

Chicago Pizza

For breakfast today the girls had scrambled eggs, a loquat from our farmer friend and banana chips. Lunch was leftover Grilled Portabella Beef Burgers without the portabellas and cumin roasted carrot fries. For dinner I made a low carb Chicago style pizza for my husband and I and a regular low carb pizza for the girls. I had been working on these crusts for awhile now and feel that I’ve got a good rendition. It is a crunchier crust with a great flavor but if you’re looking for a more traditional crust and aren’t concerned about carbs, check out my Best Primal Pizza Ever recipe.

Low Carb Primal Chicago Style Pizza

For the crust:
2 cups shredded cheese
1 cup of shelled hemp seeds
1/2 cup blanched almond flour
2 pastured eggs
1 tsp granulated garlic
1 tsp Italian seasoning
avocado oil or fat of choice

For the filling:
4 cups of cooked, shredded chicken
2 cups of shredded cheese
3 cloves minced garlic
bunch of fresh oregano
bunch of fresh thyme
1 tsp red pepper flakes
1 cup of marinara (check for sugars) or this, blended

Preheat oven to 350 degrees F. For the crust, first take the 2 cups of cheese and place in a microwave safe bowl and microwave for 1 minute, 20 seconds.

Add in the hemp seeds, almond flour, spices and eggs and combine well.

Low Carb Dough

Now take a 9 inch spring form pan, line the bottom with parchment paper and grease the bottom and sides well with fat of choice. Place a small dish with water next to the pan. Put the dough in the pan and start spreading it out coming up the sides. You will need to dip your fingers in the water to keep the dough from sticking to you. Be sure to press the dough in well where the sides and the bottom meet or it will be too thick there. It should look like this once all pressed out:

Place in the oven and bake for 30 minutes. When it comes out, it should look like this:

Combine the chicken, 2 cups of cheese, herbs and spices in a large bowl. Press mixture into the crust like this:

Pour the marinara over the top.

Place it back in the oven and bake for another 35-40 minutes.

*Of note, my family doesn’t like a lot of sauce. If you do, feel free to add more as I know that a traditional Chicago style pizza has a boatload of sauce. You would have to lower the amount of meat that you put in to be able to fit more sauce though. And now onto the traditional low carb thin crust pizza. This version took all of 5 minutes to get into the oven :)

Low Carb Primal Pizza

2 cups shredded cheese
1 cup of shelled hemp seeds
1/2 cup blanched almond flour

1 tsp Italian seasoning
avocado oil or fat of choice
1/4 cup marinara (check for sugars) or this, blended
2 cups shredded cheese (any will work – I used monterey jack because that’s what I had)
Toppings of choice

Preheat oven to 350 degrees F. Take the 2 cups of cheese and place in a microwave safe bowl and microwave for 1 minute. Add in the hemp seeds, almond flour, spices and eggs and combine well. Pour dough onto a parchment lined baking sheet. Place a small dish with water next to the pan. Spread the dough out, dipping your fingers in the water periodically to keep the dough from sticking to them. It should look like this once you’ve spread it out:

Place in the oven for 30 minutes. When it comes out, it will look like this:

Spread the marinara over the pizza, sprinkle the cheese and add toppings of choice. Place back in the oven for 15 minutes.
