Family Chow 4/26/13 – Plus Paleo Beef Stir Fry With Nopales & Fried Cauli-Rice Recipes

Nopales Stir Fry

Today for breakfast the girls had scrambled eggs and bacon. For lunch we had leftover Paleo Balsamic Baked Chicken with crispy broccoli. The girls had Greek yogurt with Paleo Cashew/Almond Crunchies, crispy broccoli and prunes. Dinner was beef stir fry with nopales and fried cauli-rice. My cauliflower was green so it made for an interesting color :) Usually I eat nopales in tacos, but I thought the flavor would lend nicely to a stir fry and it did!

Paleo Beef Stir Fry With Nopales

2 lbs grass-fed ground beef
1 lb nopales, chopped, rinsed and drained
1/4 cup coconut aminos
fresh garlic bulb and roots, diced
1 tbsp ground ginger
1 tbsp ground coriandar
1 tbsp onion powder
3 tbsp toasted sesame oil
sea salt & pepper to taste
2 tbsp extra virgin coconut oil (I like this one)

Place 1 tbsp coconut oil in a large saute pan over medium-high heat. Add the meat and cook for about 8 minutes. Next add the other tbsp of oil and the chopped garlic bulb and saute until meat is no longer pink, about 7 minutes. Add the nopales, garlic roots, spices and coconut aminos. Cover and cook about 10 minutes. Remove the lid and add the sesame oil, combining well. Plate and dig in!

Paleo Fried Cauli-Rice

1 medium head of cauliflower, riced using a food processor or cheese grater
1/4 cup coconut aminos
1 tbsp onion powder
1 tbsp granulated garlic
1 tsp red pepper flakes
sea salt & pepper to taste
2 tbsp extra virgin coconut oil

Heat the oil in a saute pan over medium-high heat. Add the riced cauliflower and saute for about 10 minutes, stirring often. Next add the coconut aminos and spices and saute for another 5 minutes.
