Today my husband and I fasted through breakfast again. We are doing this throughout Lent. This is saving us some money on bacon and eggs for sure! The girls had a slice of Paleo Banana Bread, toasted coconut chips and kumquats. For lunch we had sauteed salmon with tandoori spice and leftover Paleo Roasted Red Cabbage. The girls had yogurt with raisins, banana chips, roasted red cabbage, cucumbers and sliced green bell peppers. Dinner was calamari marinara with roasted Brussels sprouts. I went to the store today instead of Sunday because we wanted a different fish for our Lenten Friday. I’ll still post the grocery haul on Sunday showing you what I purchased. The calamari was a super great deal!
Paleo Calamari Marinara
1 1/2 lbs calamari, cleaned and sliced into 1/4″ rings
24 oz of Paleo Marinara
2 bay leaves
1 tsp red pepper flakes
Make the marinara but add the bay leaves and red pepper flakes before simmering. Once the sauce has simmered for about 30 minutes, remove the bay leaves and move it to a skillet. Add the calamari and simmer for about 3 minutes, or until it turns opaque. You could pour it over top of your favorite paleo noodle, but we just ate it as is and it was fantastic!
