Family Chow 2/15/14 – Also Primal White Turkey Chili Recipe

White Turkey Chili

Breakfast for the girls today was bacon, eggs, an apple and some banana chips. Lunch was leftover Crispy Buffalo Wings for hubby and I. The girls had yogurt with chopped bananas, potato chips (cooked in olive oil), olives and snap peas. For dinner I decided to make a white turkey chili. Traditionally, this chili gets it’s white color from cannellini beans. Since those are a no-go, I omitted them. I could have pureed some cauliflower and added that, but I didn’t think it was necessary. I just wanted a simple, spicy, hearty meal and that’s exactly what I got. If you can’t tolerate dairy, you can omit the cheese and it will still be awesome.

Primal White Turkey Chili

2.5 lbs ground turkey
1 fresh garlic bulb and light green parts, sliced
6 scallions, diced
2 celery ribs, finely diced
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp oregano
1/2 tsp ground cinnamon
1/4 tsp cayenne
sea salt to taste
2 (4oz) cans green chilies
3 cups broth of choice
1 cup tightly packed cheese of choice (I used monterey jack)
2 tbsp extra virgin coconut oil

Heat up the coconut oil in a large saute pan and cook the garlic, scallions and celery until softened, about 5-7 minutes. Add the turkey and cook until no longer pink, about 20 minutes. Next add the spices and green chilies to the pan and cook for just a couple of minutes. Add the broth, bring to a boil, then lower heat and simmer for 1 hour. About 10 minutes before it’s ready, add the cheese and give it a stir. Top with sour cream, avocado, shredded lettuce, you name it :)
