Family Chow 10/19/13 – With Bacon Burger Meatloaf Recipe

Bacon Burger Meatloaf

Today for breakfast we all had Oopsie Rolls and bacon. Lunch was leftover Huli Huli Pork & Poi for all of us. I could eat that everyday! For dinner I made a bacon burger meatloaf and man was it good. The crunchy, salty pickles really made the dish. This meatloaf kinda reminds me of a German rouladen. If you can tolerate dairy, putting cheese in the layers would be great as well!

Bacon Burger Meatloaf

3 lbs grass-fed ground beef
3 pastured eggs
1 tbsp garlic flakes
2 tsp chili powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp oregano
1 tsp ground cumin
1 tsp dry mustard

For the layers:

1 red onion, sliced into rounds
3 dill pickles, sliced (find one without food coloring and crap)
3 slices of thick-cut bacon, cut in half
4 tsp tomato paste
4 tsp spicy mustard

Preheat oven to 375 degrees F. Cook 4 of the pieces of bacon (2 whole slices) and set aside. Combine the meat ingredients in a bowl, then form into 3 even sized balls. Flatten out 1 ball into a meatloaf shape and place on a foil lined baking sheet. Place 2 tsp of tomato paste and 2 tsp of mustard on the meat and spread out. Next place 2 pieces of bacon, then half of the pickle slices, then the onions on top. It will look like this:

Now take another ball of meat and flatten it out a bit. Place it on top and seal up the sides all around the meatloaf. Next repeat another layer with the rest of the cooked bacon, then the last ball of meat flattened and placed on top. Stick the last 2 pieces of raw bacon on top of the meatloaf. It will look like this:

Place in the oven and bake for 1 hour. Let cool for about 5 minutes, then slice and serve.

    this was absolute bananas!!! i felt like i was eating a hamburger for dinner but better! i loved the charred and crispy outside of the meatloaf and i really loaded up on the bacon- 6 slices. definitely my favorite meatloaf in the entire galaxy. i swear, you need to enter this in a meatloaf competition. no doubt you would win.
