Asian Lettuce Wraps

I love those lettuce wraps from P.F. Chang’s that are made with chicken. You know, the ones with those white crunchy styrofoam strip looking things to put on top? I decided to make my own version, but with grass-fed beef. These are so flavorful and we all especially like the thin strips of pickled ginger on top as it adds a nice crunch. My youngest would devour plates of pickled ginger if I let her. At sushi restaurants we have to ask for more ginger just for her! I got extra creative with this recipe and made a homemade hoisin sauce that went into the meat. Try this and you will not be disappointed!

Asian Lettuce Wraps

2 lbs grass-fed ground beef
1 1/2 onions, diced
4 cloves garlic, minced
1/2 cup homemade hoisin sauce (recipe below)
2 tsp Chinese 5 spice powder
12 water chestnuts, thinly sliced
4 scallions, chopped
2 tsp pickled ginger strips
2 tsp sesame oil
1 tbsp fat of choice

Heat the tbsp of fat of choice in a large saute pan over medium high heat. Cook the beef until no longer pink, about 15 minutes. Place the meat in a large bowl and set aside. Saute the onions until starting to brown, about 8 minutes. Add the garlic, coconut aminos, hoisin, ginger and vinegar and combine well. Next add in the water chestnuts, scallions, sesame oil, and meat back into the pan. Cook for another couple of minutes. Place meat mixture in a lettuce leaf (I used iceberg) and garnish with additional ginger strips and chili garlic sauce.

Hoisin Sauce

4 tbsp coconut aminos
2 tbsp creamy almond butter
1 tbsp raw honey
2 tsp distilled white vinegar
2 tsp sesame oil
1/8 tsp garlic powder
fresh cracked black pepper to taste

Combine all ingredients in a bowl. Makes 1/2 cup.
