Well, I did it again this month. I decided to do a double Paleo Pen Pals swap with Amy, my friend over at Cavemom Lifestyle on the side. I get excited to see what I’m going to receive in the mail to cook with and I was pleasantly surprised when I opened my package to find this:
Rather than go the sweet route, I decided on a savory application. There was a great sale on New York steaks and I knew I could put together a great crust for it so I went for it. It turned out quite delicious. The chocolate and the coffee together give it a rich, earthy flavor. If you don’t have chocolate covered cacao nibs, regular nibs will work just fine
Chocolate Cacao Nib Crusted Steak
2 10 oz New York Steaks
1 tbsp chocolate covered cacao nibs
1 tbsp organic coffee beans
1/2 tsp sea salt
1/4 tsp ground cayenne
Take your steaks out about an hour before you plan to cook them. Place the cacao nibs and coffee beans into a coffee or spice grinder and grind to a coarse ground consistency like this:
Stir in the sea salt and cayenne and then rub all over the steaks.
Grill over high heat for about 3 minutes per side. I used a grill pan.
